物理性状:白色颗粒或结晶性粉末。无臭或微带安息香气味,味微甜,有收敛性。易溶于水(常温)53.0g/100ml左右,PH在8左右。
主要用途:苯甲酸钠是酸性防腐剂,在碱性介质中无杀菌、抑菌作用;其防腐最佳PH是2.5-4.0,在PH5.0时5%的溶液杀菌效果也不是很好。苯甲酸钠亲油性较大,易穿透细胞膜进入细胞体内,干扰细胞膜的通透性,抑制细胞膜对氨基酸的吸收;进入细胞体内电离酸化细胞内的碱储,并抑制细胞的呼吸酶系的活性,阻止乙酰辅酶A缩合反应,从而起到食品防腐的目的。
Sodium benzoate, E-211, is sodium salt of benzoic acid.
The product occurs naturally in cranberries and cowberries. However, the product is normally produced synthetically.
Sodium benzoate – also known under the trade name Atamon – is used as a preservative in a wide range of foods.
The product restrains the growth of especially yeast and mould fungus and various bacteria. However, the effect is most favourable in a sour environment (pH between 2.5 and 4.5).
The product is used primarily within the bakery, brewery, fish, fruit, confectionery, meat, marmalade, soft drink and salad industry.
